Spicy avocado porridge with wild mushrooms

Here at 3Bears we love our fruit, but you really can't underestimate our pithy classic. Especially in the carnival season it can dress up incredibly well - for example as a hearty avocado porridge. Juicy mushrooms, fresh basil and a ripe avocado to go with it - it couldn't be better!

Preparation time: approx. 15 minutes | For 2 persons

Ingredients

 

For the topping
  • 100g mixed wild mushrooms (e.g. porcini)
  • 1 tablespoon of olive oil
  • 100g fresh goat cheese or feta
  • 1 avocado
  • 2 cherry tomatoes
  • salt and pepper, some basil leaves to taste
Preparation
  1. Wash, sort and shake the spinach dry. Mix the porridge with the vegetable stock and spinach and simmer for 3 minutes at medium heat.
  2. Carefully rub the wild mushrooms with a kitchen towel. Heat the olive oil and fry the mushrooms briefly in it. Crumble the goat's cream cheese into large pieces. Cut the avocado into slices. Wash the tomatoes, remove the stalk and cut the tomatoes in half.
  3. Divide the porridge into two bowls. Put the mushroom mixture on the porridge and garnish with slices of avocado, goat's cheese and halved cherry tomatoes. Season to taste with salt and pepper and arrange with some basil leaves. 
  4. Tip: Try this hearty porridge with a poached egg - to recharge your batteries after a long bike ride!
