Let it snow, let it snow, let it snow!
Do you know that? You're taking a wonderful winter walk... it smells fabulous of a fireplace and fresh winter air. And then? First get into the warmth with cookies and a cup of hot tea or cocoa!
Together with our community, we tried out for you which oat Christmas cookies are best for snuggling up in your warm living room!
Vegan hazelnut cookies with fruity jam filling
Preparation time: approx. 40 minutes | Baking time: approx. 10 minutes
Ingredients
For the oat cookies:

200g flour
-
1 teaspoon Baking powder
-
100g whole cane sugar
-
100g margarine
-
3 tbsp hazelnut butter
-
3 tbsp sugar beet syrup
-
1 teaspoon vanilla or vanilla essence
-
1 tsp cinnamon
-
About 1/2 glass of strawberry jam
-
Powdered sugar for dusting
Preparation
Preheat the oven to 170°C and line a baking tray with baking paper.

Put 75g Kerniger Classic into a stand mixer and mix the oat flakes until they become a fine flour.

Mix the oat flour, wheat flour and baking powder in a bowl.

Place the remaining ingredients for the dough in a second bowl. Beat the mixture with a mixer until fluffy and then add the dry ingredients.

Next, knead the mixture into a no longer sticky, homogeneous shortcrust pastry. If the dough is still a little sticky, add a little wheat flour.

Form the shortcrust pastry into a ball and place it in the refrigerator for about 30 minutes.

Roll out the chilled dough on a floured work surface to a thickness of about 0.4cm.

Now cut out shapes of your choice from the dough using a cookie cutter. Cut out the middle of half of the cookies to create a hole.

Bake the cookies at around 170° C (top/bottom heat) for 8-10 minutes depending on the size of the cookies.

Then let the baked cookies cool for at least an hour.

Then spread about 1/3 teaspoon of strawberry jam on each of the “whole” cookies .

Place an upper biscuit half on each coated lower half.

Finally, lay out the oat cookies next to each other and dust the icing sugar over the cookies.
The cookies will last for about four weeks if stored in a cool place.
3Bears Porridge Recipe for Banana- Apple-Oat Taler (vegan)
Preparation time: approx. 20 minutes | Baking time: approx. 15 minutes
Ingredients
- 240g 3Bears Porridge Crunchy Classic or 3Bears Porridge Cinnamon Apple
- 120g peanut butter
- 4 tbsp agave syrup or honey
- 1 apple, peeled and cut into very small pieces
- 1 banana, mashed with a fork
- 1 handful of pumpkin seeds
- 1 handful of cranberries or other dried fruit of your choice
- 4 tbsp flax seeds, ground
- 1/2 tsp salt
- 1 tsp cinnamon
Toppings (optional)
- Chocolate for chocolate sprinkles
- Sugar and lemon for icing
Preparation
Preheat the oven to 175°C and line a baking tray with baking paper.
- Put all ingredients in a bowl and mix. The liquid in the fruit and the creamy consistency of the peanut butter turn the oat flakes and other ingredients into a uniform mass. However, the dough remains quite firm - that's how it has to be.
- Form about 15 balls out of the tough dough and place them on the baking tray. Use a fork to flatten the oatmeal balls and shape them. If the dough sticks to the fork, it can help to rinse the fork again and again under very cold water.
- The distance between the oat balls does not have to be large - the dough will not rise in the oven.
- Bake for 15 minutes and then let cool.
- Decorate with chocolate or icing as desired!
Vegan coconut oat cookies with cashews and chia
Preparation time: approx. 40 minutes | Baking time: approx. 12 minutes
Ingredients

100g coconut blossom syrup, agave syrup or honey

60g cashews
-
50ml coconut oil
-
60g coconut flakes
-
2 tsp chia seeds
-
1 pinch of salt
Preparation
Preheat the oven to 180°C and line a baking tray with baking paper.
- Process cashews and porridge in a stand mixer to form a flour.
- Melt the coconut oil and mix with syrup or honey. Then add the coconut flakes, chia seeds and salt and mix the ingredients well.
- Now the dough needs to rest in the refrigerator for about 30 minutes.
- Then take the dough out of the bowl and form small round cookies.
- Place the cookies on a baking sheet lined with baking paper in the oven and bake for about 12 minutes until golden brown.
- A great tip: Enjoy the oat cookies when they are still nice and warm!
