Why should you soak oatmeal, and are soaked oatmeal better for my body?

Oat flakes contain phytic acid. This acid binds minerals such as iron, calcium, magnesium, and zinc, making them less readily absorbed by our bodies. Soaking oat flakes for an extended period before eating reduces the phytic acid content, allowing us to better absorb the valuable nutrients. This soaking time is therefore a key reason why overnight oats are so easily digestible.
