Dominik Käppeler , who has been awarded a Michelin star, tells you the recipe for his heavenly oat cookies with apple tonka bean cream. Ingredients
Oat cookie dough
- 300g 3Bears Porridge A hearty classic
- 80g unroasted ground hazelnuts
- 5 grated tonka beans
- 1 pinch of salt
- 300g maltodextrin
- 30ml water
Filling
- 160ml apple juice
- 100g sugar
- some grated tonka beans
- 45g cream
- 20g cornstarch
- 100g white chocolate coating
- 100g butter
- some lemon juice
Preparation
- For the dough, mix all the ingredients together and pour thinly into metal cookie moulds.
- Bake in the oven at 100°C for 10 minutes and then at 135°C for 20 minutes.
- For the filling, mix apple juice, sugar and tonka beans and bring to the boil.
- Add cream and cornstarch and simmer over low heat for 30 seconds. Stir constantly.
- Add the couverture and let the whole thing cool down to 50°C (lukewarm).
- Add butter, mix until creamy and season with a little lemon juice.
- Fill cookies and serve!
