Summer is in full swing, so an occasional cool down is simply a must. How perfect that today is ice cream day - ideally you spend it with a large portion of the cool treat. The perfect opportunity to enjoy a piece of delicious oatmeal apple cake with a scoop of cool vanilla ice cream. Our guest blogger Bika created this delicious recipe using our fabulous Cinnamon Apple and Kerniger Classic varieties. Mmmmm...
Preparation time: 30 minutes | Rest time: 60 minutes | Baking time: 30 minutes
Ingredients:
For the shortcrust pastry:
150g whole wheat flour
50g walnut protein powder (if you don't want to buy this separately, just use 50g more whole wheat flour)
40g powdered sugar
10g coconut blossom sugar
100g butter
1 pinch of salt
1 egg
For the sprinkles:
50g 3Bears Crunchy classic
50g 3Bears Cinnamon Apple
100g wheat flour
50g brown sugar
1/4 tsp salt
50g butter
For the apples:
5 large green apples
1/2 tsp cinnamon
1/4 tsp nutmeg
10g coconut blossom sugar
2 tbsp water
20g butter (melted)
Preparation:
- Put all the ingredients for the shortcrust pastry in a bowl and mix with the dough hook of the hand mixer. Then finish kneading the dough with your hands. If the dough is still too sticky, add a little flour.
- Place the dough covered in the refrigerator for about an hour.
- Now mix the streusel ingredients together so that small clumps form.
- Preheat the oven to 175 degrees (top and bottom heat).
- Next, cut the apples into eighths and cut the eighths into thin slices.
- Mix the apples in a bowl with the remaining ingredients.
- Now roll out the dough and press it into a quiche pan.
- Distribute the apple slices evenly over the cake batter.
- Spread the crumble over the apple slices.
- Bake in the oven for about 30 minutes.
- Serve the cake warm or cold with vanilla ice cream and enjoy.
