Because we enjoy your porridge creations as much as you do, we would like to share our highlight recipe with you every month! The second round is already underway in July and you can easily bake the juicy, vegan porridge muffins from our fan (Oaty 🐻) of the month @juliesfooddesign !
Ingredients
2 cups Overnight Oats – Golden Mango
1 cup Wholemeal Spelt Flour
1 teaspoon Baking Powder
2 tsp Cinnamon
Zest of half a Lemon
1 pinch of Salt
1 Mango
1/3 cup Maple Syrup
2 tbsp Ground Flaxseeds
4 tbsp Water
1/2 cup Almond Yogurt
1/2 cup Coconut Oil
1/2 cup Oat Milk
Preparation
Mix all the dry ingredients together. Dice the mango and mix. Mix the remaining ingredients well in a second bowl. Add the liquid ingredients to the flour mixture and mix. Divide the batter evenly between 16-18 muffin cups. Bake for approx. 20-25 minutes at 175 degrees.
